Spinach and Sausage Dressing
Yield: enough stuffing for 12 - 16 lb turkey
Ingredients:
- 2 packages (12 oz) sausage
- 3/4 cup (1 1/2 stick) butter
- 3 medium onions, chopped
- 2 cups celery including tops
- 3/4 (1-pound) white bread with crust, town into small pieces
- 2 eggs, beaten
- 1-10-oz package frozen shopped spinach, thawed and squeezed dry
- 1-8 oz. can water chestnuts, drained and chopped or 1 apple, chopped
- 1/2 cup chopped fresh parsley
- 1 TBSP plus 1 1/2 tsp poultry seasoning (dried tarragon, thyme and sage)
- 2 tsp salt
- 1 1/2 tsp pepper
Directions:
- Preheat oven 325° F.
- Cook sausage and crumble and transfer to large mixing bowl.
- Saute onions in butter. Add celery and cook 2-3 minutes.
- Add mixture to sausage.
- Add remaining ingredients, mixing throughly but gently.
- Use to stuff turkey loosely just before roasting .
- Place any remaining stuffing in greased baking dish.
- Bake 30 minutes.
