Spinach and Sausage Dressing

Yield: enough stuffing for 12 - 16 lb turkey

Ingredients:

• 2 packages (12 oz) sausage
• 3/4 cup (1 1/2 stick) butter
• 3 medium onions, chopped
• 2 cups celery including tops
• 3/4 (1-pound) white bread with crust, town into small pieces
• 2 eggs, beaten
• 1-10-oz package frozen shopped spinach, thawed and squeezed dry
• 1-8 oz. can water chestnuts, drained and chopped or 1 apple, chopped
• 1/2 cup chopped fresh parsley
• 1 TBSP plus 1 1/2 tsp poultry seasoning (dried tarragon, thyme and sage)
• 2 tsp salt
• 1 1/2 tsp pepper

Directions:

1. Preheat oven 325° F.
2. Cook sausage and crumble and transfer to large mixing bowl.
3. Saute onions in butter. Add celery and cook 2-3 minutes.
4. Add mixture to sausage.
5. Add remaining ingredients, mixing throughly but gently.
6. Use to stuff turkey loosely just before roasting .
7. Place any remaining stuffing in greased baking dish.
8. Bake 30 minutes.
